HEALTHY BANANA-NUT MUFFINS 
1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup brown sugar
1/2 cup chopped walnuts
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2 medium bananas, mashed
2 large eggs
1 cup milk
1/3 cup oil

Preheat oven to 400°F.

Mix both flours with sugar and walnuts. Stir in baking powder, cinnamon and salt.

Place mashed bananas in separate bowl. Add eggs, milk and oil and mix well. Add wet ingredients to dry, mixing just until moistened. Spoon into lightly greased muffin tins.

Bake at 400°F for 15 to 20 minutes, depending on size. Cool on wire racks.

Serves 6 to 8.
