“BEST EVER BANANA MUFFINS” IS IN:

BEST EVER BANANA MUFFINS 
2 1/4 cups all-purpose or white whole-wheat flour
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 cup (1 stick) butter, melted
2 cups firmly packed brown sugar
2 large eggs
2 large extra ripe bananas (peeled and mashed)
1 tsp. vanilla
1/2 cup walnuts or pecans, chopped

In a large bowl, sift together the flour, salt, baking powder, and cinnamon.

In a separate bowl, mix the butter and brown sugar. Stir in the eggs, then add the bananas. Stir in the vanilla.

Combine the liquid mixture with the dry ingredients, stirring together only until all ingredients are moistened.

Stir in chopped nuts. Transfer the batter into greased muffin cups, filling 2/3 full.

Bake in a preheated 350°F oven for 25 to 30 minutes or until a toothpick inserted in a center comes out clean.

Makes 18 muffins.

Nutrition (1 muffin per serving): 239 calories, 69 calories from fat, 8g total fat, 37.1mg cholesterol, 134.7mg sodium, 127.4mg potassium, 40.1g carbohydrates, 1.1g fiber, 25.8g sugar, 3.1g protein.

I used the whole wheat flour instead of all purpose and I thought they still turned out pretty good. I agree they could use a little less brown sugar, but overall I thought they were very tasty!

Just made these with my kids. My son loved them! I thought they were really good, but again a little on the sweet side for me. Over all pretty good and easy to make.

It is true-they are the best! I threw in some leftover chocolate chips, a handful of almond slivers and a handful of coconut (no pecans/walnuts). They were great!

This is a great recipe, but to much sugar, I use only one cup of brown sugar, because the bananas itself they're sweet, and I add to it some walnuts and chocolates chips, they were great!

I followed the recipe as it is. Came out very moist inside and crispy on the top. The muffins I made are a little on the smaller side (24 muffins for the recipe above) and I baked them for 18 minutes in a convection oven. Recipe is perfect. Really the best recipe for banana muffin. I think the sugar amount is fine in the recipe. My kids love them too.

Be sure to watch your muffins I did mine 25 minutes and they came out burned and personally I really felt they were missing something.

I followed the recipe to the letter except with the amount of brown sugar. I used 1 1/2 cups instead of 2. I baked the muffins at a few minutes less than the recommended 25 and sadly, while they didn't burn, they were a bit dry. So, the second batch I baked for 15 minutes and the toothpick came out clean. Therefore, I'd recommend baking a few minutes less and if it needs more then, by all means, bake a little longer. I guess it depends on the oven.
