SQUASH CASSEROLE 
4 or 5 c. squash (fresh) or 1 quart of canned
1 c. sour cream
1 onion, chopped
1 can mushroom or cream of chicken soup
1 stick butter
1 pkg. Stove Top stuffing

Cook squash just until tender. Drain. Mix soup, onion and sour cream. Add squash. Melt butter and mix with Stove Top stuffing. Spread 1/2 stuffing mixture on bottom of dish. Add squash, then cover with rest of stuffing mixture. Bake at 350 degrees for 35 minutes.

This recipe is absolutely delicious and has such a great taste... It is equally good with fresh squash out of the garden! I boiled my onion along with my squash and it was perfect!
