POTATO CASSEROLE 
6-8 med. potatoes (cook in skins, cool then shred into a 2 quart casserole dish)
2 c. shredded cheese (Cheddar)
1/4 c. butter
2 c. sour cream
1/3 c. chopped green onions
1 tsp. salt
1/4 tsp. white pepper
2 tbsp. butter

Over low heat melt 1/4 cup butter and cheese. Blend in sour cream. Remove from heat and green onions. Stir in potatoes. Dot with butter and bake 25 minutes at 350 degrees.
