QUICK COTTAGE CHEESE BREAD 
3/4 c. cottage cheese
3 c. all purpose flour
1/2 tsp. baking soda
2 tsp. baking powder
3/4 c. sugar
3/4 tsp. salt
1/3 c. shortening
2 eggs, slightly beaten
2 tbsp. milk
1 1/2 tsp. vanilla
1/2 c. raisins

Sift dry ingredients into bowl. Cut in shortening and cottage cheese until particles are fine. Blend in eggs, milk and vanilla. Stir in raisins. Knead on a floured board until smooth (about 5 minutes). Roll out dough into a 10 inch circle. Lift one side and fold over to within 2 inches of opposite side. Place on ungreased cookie sheet.

Bake at 350 degrees for 45 to 55 minutes. Remove from oven and sprinkle with confectioners' sugar while still hot.

This has to be one of the best quick bread recipes I've ever tried. I just made it yesterday for the first time with only one addition to the recipe - walnuts. I also folded both sides towards the middle before baking which made a half round loaf. My husband and I had a slice while it was still warm... and went for the second warm slice about 5 minutes later. You can slice it easily and toast it in the morning for breakfast. I plan to try making the recipe without all the sugar and use it as a sandwich bread - I can imagine how great a grilled cheese sandwich could be, made with this bread... YUM!
