COTTAGE CHEESE FRUIT BREAD 
6 tbsp. butter
1/2 c. firmly packed brown sugar
2 eggs
1 tbsp. grated lemon peel
1 tbsp. grated orange peel
1 1/2 c. cottage cheese
2 c. flour
2 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 c. finely chopped dried apricots
1/2 c. chopped pecans

Cream butter in a large mixing bowl; gradually add sugar and beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add lemon and orange peels and cottage cheese; beat well. Mix flour, baking powder, soda, and salt; add to creamed mixture. Mix just until blended. Fold in apricots and nuts. Turn into a greased 10 x 3 1/2 inch pan. Bake at 350 degrees for 60 minutes.

I have an old 70's handwritten recipe for Cottage Cheese Fruit Bread whose ingredients are the same as this Cooks.com recipe except my recipe calls for 1 cup diced apricots, 1 cup diced dates and no nuts. It is baked in two greased & flour 8 1/2 x 4 1/2 loaf pans. The bread is excellent flavor and texture. Easy to make, definitely a keeper!
