YELLOW SQUASH CASSEROLE | |
6 yellow squash or enough to make 1 quart, sliced 1 tsp. salt 3 tbsp. butter 1 egg, beaten 1 c. grated cheese 1/4 c. chopped onion 1/2 c. milk 1 c. cracker crumbs Cook squash in small amount of salted water until tender, drain and mash. Add butter, cheese, beaten egg, onion, milk and 3/4 cup cracker crumbs. Put into buttered baking dish and sprinkle top with remaining cracker crumbs. Bake in 425 degree oven for 20 to 25 minutes. Serves 6. |
