BRAN AND WHOLE WHEAT BUTTERMILK
WAFFLES
 
3 lg. eggs, separated (use only 1 yolk)
1 cup unbleached white flour
1/2 cup bran (combination of wheat/oat may be used)
1/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cup buttermilk
2 tablespoons Land O' Lakes Butter with Olive Oil

Combine flours, baking soda, baking powder, and salt in a mixing bowl. Stir until well combined. Whisk together buttermilk, egg yolks and Land O' Lakes Butter with Olive Oil.

Beat egg whites separately until stiff but not dry.

Spray a waffle lightly with non-stick spray. Preheat iron 10 minutes before using.

Add buttermilk mixture to flour mixture and stir briefly until blended; do not overmix.

Add beaten egg whites to batter and fold in with several swift strokes, leaving a few fluffs of egg white.

Bake on a very hot waffle iron.

Serve hot with syrup or desired toppings.

This is the greatest waffle I have ever made! I thought they would taste like'park bench' with the whole wheat and wheat bran, but they came out beautifully. I'm on Weight Watchers, and this worked well into my plan; two waffles with sliced strawberries on top. Yum! (No need for butter on top.)

I love this recipe- the changes I made were to add 2 tsp vanilla, increased the buttermilk to 1 3/4 cups and I didn't bother with the whipping of the whites and folding in.... I measured my dry ingredients and my wet separately, used a whisk on the wet and added it to the dry. My waffles tuned out very light delicious. Husband and daughter had no idea it wasn't "store bought mix"!
