APPLE & OAT BRAN MUFFIN 
1 1/4 c. whole wheat flour
1 c. oat bran
1/3 c. brown sugar, packed
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. cinnamon
1 c. buttermilk
2 egg whites
2 tbsp. oil
3/4 c. apples, peeled & shredded

Stir together dry ingredients and set aside. Combine buttermilk, egg whites and oil. Add to dry ingredients. Stir just until moistened. Stir in shredded apple. (Batter may be stored tightly covered for up to 5 days.)

To bake, spray muffin cups with nonstick coating. Spoon about 1/4 cup batter in each muffin cup. Bake in oven at 375 degrees for 18-20 minutes or until a toothpick inserted in center comes out clear. Makes 12 muffins.
