SUGAR-FREE/FAT-FREE BRAN MUFFINS 
1/2 c. all-purpose flour
1/2 c. whole-wheat flour
1/2 c. rolled oats
1/2 c. bran flakes
1/4 c. Splenda
1/2 tsp. baking soda
1/4 tsp. salt
3/4 c. buttermilk or sour milk
1 egg
1 tbsp. vegetable oil
3 tbsp. applesauce

Preheat oven to 425°F. Mix dry ingredients. Make well in center and pour liquids into it. Stir only long enough to mix all ingredients.

Bake for 15 to 18 minutes in a greased muffin pan.

Makes 12 muffins.

Absolutely satisfying. Doesn't taste like a diet muffin. I added cinnamon, vanilla and blueberries. It did not add any sugar or fat!

Thank you for posting a true sugar-free recipe. There are way too many recipes that have "sugar-free" or "diabetic" in the title but add lots of dried fruit or raisins, or even honey, which are full of sugar.
