“HOT FUDGE PUDDING CAKE” IS IN:

HOT FUDGE PUDDING CAKE 
1 cup all-purpose flour
3/4 cup sugar
2 tbsp. cocoa
2 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
2 tbsp. shortening, melted*
1 cup finely chopped nuts (optional)
1 cup brown sugar, packed
1/4 cup cocoa
1 3/4 cups hot water

Preheat oven to 350°F.

In a mixing bowl, measure flour, sugar, 2 tbsp. cocoa (or use up to 4 tbsp.), baking powder and salt. Blend in milk and shortening; stir in nuts.

Pour into an ungreased 9x9x2-inch square baking pan.

Stir together brown sugar and 1/4 cup cocoa; sprinkle over batter. Pour hot water over the batter. Do not stir!

Bake for 30-45 minutes or until a toothpick inserted in center of cake (not the pudding) comes out clean.

While the cake is still very warm from the oven, spoon cake and pudding into dessert cups or serving bowls. Top with Cool Whip, whipped cream flavored with rum or vanilla ice cream, or garnished with chocolate curls, if desired, or serve as-is.

*If using salted butter, decrease salt by half.

Been making this for years! It is so simple but can be served as an elegant dessert. It's a great experiment for kids, too, b/c the pudding ends up on the bottom! Yum! Now I want to make some!

I have been making this cake for years. I make it with butter, increase the cocoa to 1/4 cup for the batter, add a dash of cayenne to the cake batter to enhance the chocolate and add 1/2 cup chopped toasted walnuts. I pour hot coffee rather than just water over the top. A little more grown-up version of a family favorite.

One of my absolute favorite recipes! I find myself craving this every winter. I've also made a spice cake variation by adding cinnamon & nutmeg and leaving out the cocoa. Dot a little butter on top and increase the brown sugar. Caramel Spice pudding.

I'm a big fan of hot fudge pudding cake, even though I call it "brownie pudding". This is a great recipe, and easy too! I saw that it had what seemed like a fair amount of sugar, so I used unsweetened cocoa. Made a very decent, sweet pudding cake if you don't like desserts that are TOO sweet. I'm not one of those people, I like very sweet, so next time I'll use sweetened cocoa.

This pudding cake can be reheated in the microwave the next day, taking care not to overheat it if you don't like melted whipped cream or ice cream. Very good at room temperature too.

About the nuts: this was the first time I had used nuts in this dessert, and I used 1 cup of walnuts, my favorite nut. I thought 1 cup of walnut pieces was too much, so next time I'll use about half that amount, and toast the nuts in a dry skillet first.
