HARVEST CAKE 
4 c. diced fresh apples
2 c. sugar
2 eggs
1 c. cooking oil (Wesson)
1 c. chopped walnuts
1 tsp. salt
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla
3 c. flour

Mix together apples and sugar. Let stand 1 hour. Sift together flour, soda, and spices. Beat eggs. Add oil and vanilla. Add to apple mixture. Then add flour and spices. Stir in walnuts.

Bake in greased and floured pan. (Tube pan can be used). Bake at 350 degrees for 1 hour or until done. Frost with butter icing and sprinkle top with finely chopped walnuts.
