HARVEST CAKE 
Peel and dice 4 cups apples. Cover with 2 cups sugar; let stand 2 hours. In large bowl mix together 2 eggs, 1 teaspoon vanilla. Add 1 cup oil; then add apple and sugar mix.

3 c. flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg

Then add 1 cup chopped nuts and 1/2 cup raisins. Bake in angel food tube pan at 300 degrees for 1 hour; then 350 degrees for 20 minutes or until done.
