APPLE HARVEST CAKE 
1 1/2 c. sugar
1 1/2 c. vegetable oil
3 eggs
2 tsp. vanilla
2 c. sifted all-purpose flour
2 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
2 c. shredded carrots
1 c. coarsely chopped apples
1 c. golden raisins
1 c. chopped pecans

Combine first 4 ingredients in a large bowl; blend thoroughly. Sift together the dry ingredients; add to first mixture and mix well. Stir in remaining ingredients. Pour into 2 greased and wax paper lined 9 inch cake pans. Bake at 350 degrees for 35-45 minutes until center of cake is firm to touch. Cool in pans 10 minutes. Remove from pans and finish cooling on cake racks. Frost with Pecan Cream Cheese Frosting.

PECAN CREAM CHEESE FROSTING:

2 (3 oz.) pkg. cream cheese, softened
1 tsp. milk
2 tsp. vanilla
Dash salt
1 (1 lb.) box confectioners' sugar
1/2 c. chopped pecans
