FRESH APPLE/PINEAPPLE CAKE 
2 c. sugar
1 1/2 c. oil
3 lg. eggs
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. vanilla
1 1/2 c. firm apples, diced
1 1/2 c. pineapple, diced
3/4 c. flaked coconut
1 c. walnuts
1/2 c. raisins
1/2 c. dates, chopped

Mix sugar and oil. Add egg and beat well. Combine flour, salt and soda together. Add to oil mixture. Stir in vanilla, apples, pineapple, coconut, walnuts, raisins and dates. Mixture will be very thick. Spoon into a 9 inch oiled cake pan or a bundt cake pan. Bake at 350 degrees for 80 to 90 minutes.

Baking time is not right.. I baked the cake 60 minutes and it came out over baked. I drizzled it with left over pineapple juice to put some moisture back into it.

The cake is just out of the oven. What I will say is that it looks and smells delicious. It is a little darker than I expected, probably because I read the other review and set the timer for 60 minutes. It was not cooked, knife had about 1 inch of batter. Added 10 minutes...then another ten. Just so that you don't open the oven so often, you now have another review. Have a 4 because I haven't tasted yet.
