PUMPKIN-WALNUT CAKE 
3 c. sifted flour
2 tsp. baking powder
2 tsp. baking soda
3 1/2 tsp. cinnamon
1 tsp. salt
4 lg. eggs
2 c. sugar
1 1/2 c. corn oil
1 can pumpkin
1 c. chopped black walnuts

Sift together sifted flour, baking powder, baking soda, salt, and cinnamon in a large bowl. With electric mixer at high speed, beat eggs until yolks and whites are combined. Gradually add sugar, beating until thick and a lemon color is reached. Beating constantly, pour in corn oil.

With electric mixer at low speed, blend in dry ingredients, alternate with pumpkin, beginning and ending with dry ingredients. Beat until smooth after each addition. Stir in walnuts. Pour into ungreased angel food cake pan or other tube pan. Bake at 350 degrees until done, usually 1 hour and 10 minutes. Cool cake.
