GLUTEN FREE PUMPKIN CAKE 
1 (16 oz.) pkg. Petley Grain Naturally White Cake Mix
1/2 cup sugar
2 tsp. of pumpkin pie spice
1/4 cup vegetable oil
1 (15 oz.) can natural pumpkin puree
2 eggs
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup chopped walnuts or pecans

Preheat the oven to 350°F.

Place ingredients in a bowl. Blend with a hand whisk or mixer. Pour into a well greased (8 1/2 by 4 1/2) loaf pan.

Bake at 350°F for 1 hour and 20 minutes or until a toothpick comes out clean. Drop out on a wire rack and cool for 1 hour or longer before slicing.
