SWEET AND SOUR SPAM 
1/3 c. brown sugar
3 tbsp. cornstarch
3 tbsp. vinegar
2 tbsp. catsup
2 tbsp. soy sauce
1 sm. onion, chopped
1 green pepper, chopped
1 c. Spam, diced
20 oz. can pineapple chunks (reserve juice)

Mix brown sugar and cornstarch in 10 inch skillet. Add enough water to pineapple juice to measure 2 1/4 cups. Stir juice mixture, vinegar, catsup and soy sauce into skillet.

Cook over medium heat until mixture boils and thickens. Stir in pineapple chunks, onion and green pepper and diced Spam. Reduce heat and simmer until heated. Serve over rice.

Just like I remember my mom making. GREAT recipe, easy to make. I let the sweet and sour mixture simmer for about 20 minutes so the vegetables would be crisp tender, otherwise they would have eaten as though they were raw. Thanks!

Was very good - thanks for posting it No leftovers :-)

Swapped out green pepper to red, and added some diced carrots
Sauteed the veggies for about 8 minutes before adding to the sauce, otherwise the picky eater would have made a fuss about raw vegetables
