FRENCH-FRIED ONIONS 
1 c. all-purpose flour
1/4 tsp. salt
1/2 c. evaporated milk
2 tbsp. salad oil
1 egg white, unbeaten
About 6 tbsp. water
3 lg. 3-inch diameter onions, peeled and sliced 1/4 inch thick
Shortening for frying
Salt

Put flour and salt in bowl. Add milk, oil, and egg white all at once and beat until smooth. Add just enough water to make a medium thin batter. Dip onion rings in batter and drop, a few at a time, into deep fat heated to 375 degrees and fry until golden brown on both sides. Lift out with fork and drain on absorbent paper. Sprinkle with salt.
