BUTTERY MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. unsalted nuts (peanuts, pecans, walnuts or cashews)
1/2 tsp. vanilla
1/2 tsp. maple extract
1 1/2 tsp. butter
1 tsp. baking soda

Combine sugar and corn syrup in a 4 cup glass measure. Microwave on high power 3 1/2 minutes. Stir in nuts and microwave on high 2 1/2 minutes. Add vanilla, maple extract, and butter and return to microwave on high 1 1/2 minutes. Quickly stir in soda and mix well. Turn out onto a greased cookie sheet. Quickly spread to desired thickness. Let cool and crack into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.

OMG!! I just tried this recipe & found the best ever. I used dry roasted salted peanuts (for the salty-sweet) & it turned out to be the best ever. I didn't have a thermometer, so with this one done in minutes, WOW!! I will use this one forever. I'm a 65 yr old great-grandmother & have tried MANY brittles. This one is perfect. Thanx soooo much to whomever sent in this recipe.
