MICROWAVE PEANUT OR PECAN
BRITTLE
 
1 c. white sugar (or mix part brown sugar)
1/2 c. light corn syrup
1 c. raw peanuts, pecans, or cashews
1 tsp. vanilla
1 tsp. butter
Dash of salt
1 tsp. baking soda

In a 4 cups micro-proof container, place sugar, syrup, and nuts. Mix and cook full power for 6-7 minutes (to soft crack stage), stirring after 4 minutes. Add vanilla, butter, and salt. Cook 1 1/2 to 2 1/2 minutes until light caramel color and hard crack stage is reached. Add soda. Stir until light and foamy. Pour into lightly greased jelly roll pan or cookie sheet. Cool and break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
