BANANA CRANBERRY BREAD | |
1 1/2 cups all-purpose flour 3/4 cup sugar 1 tsp. baking powder 1/4 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 1/4 tsp. nutmeg, ginger or mace (optional) 1 cup mashed bananas (about 3) 1/2 cup vegetable oil 1/2 cup plain or banana yogurt 2 large eggs 1 tsp. vanilla extract 1 cup dried cranberries 1 cup chopped nuts (almonds, pecans, walnuts or Macadamia) Grease and lightly dust with flour a 9x5 inch loaf pan. Preheat oven to 350°F. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg. Whisk or stir together until no streaks of cinnamon remain. In a smaller bowl, mash bananas; add oil, yogurt, eggs. Beat liquids 1 minute and add to dry mixture; stir in vanilla, cranberries and nuts, mixing only until combined. Transfer to prepared loaf pan and level off top with the back of a spoon or spatula dipped in water. Bake for 55 to 65 minutes, or until a wooden pick inserted in center comes out clean. Begin checking at about 50 minutes but don't open the oven before that time. To Prepare in a Food Processor: Place the bananas in the processor bowl, process til smooth and add the remaining liquid ingredients and spices. Add the baking powder and baking soda, eggs, oil and vanilla; process 10 seconds. Add the flour and process another 10 seconds.
