“GEOFF'S IRISH POPPERS” IS IN:

GEOFF'S IRISH POPPERS 
6 Denny rashers (that's lean slices of bacon for non Irish readers)
Philadelphia garlic and basil cream cheese (or preferred cream cheese)
10 fresh green jalapeno peppers
2 eggs
seasoned bread crumbs, fine and dry

Crisp the bacon until... Well its crispy... Let it cool then slice into small strips.

Halve all the jalapenos, try and halve the stems as well, de-seed n wash (you might want to use a spoon or something, this stuff tends to sting when it gets under your fingernails, then you forget and rub your eye and its game over, lol).

Next place in each jalapeno half a piece of crispy bacon, fill and smooth off with the cream cheese.

Now whisk your eggs in a bowl, and place your fine breadcrumbs in another. Start dipping your jalapenos ... First in the egg, then in breadcrumbs, then in the egg again and then into the breadcrumbs one last time (we require a good coating you see). Repeat until all the poppers are done.

Fun part now, after the clean-up heat your deep fat fryer until very hot and drop all your poppers in, stirring occasionally (you might wanna crack open an ice cold beer at this stage to celebrate, any beer will do, I like the auld Coors). Shake and remove all poppers into a paper towel filled basket when they are golden brown.

Serve with a salsa dip, beers and football!

Makes 20 poppers.
