BILL'S BREAKFAST CASSEROLE | |
1 lb. breakfast sausage 1 large chopped onion 1/2 chopped green bell pepper 6 large eggs 1 cup milk 2 tbsp. mayonnaise (or substitute) 1 cup cheddar cheese (shredded) 1 1/2 cups Bisquick baking mix 3 tbsp. melted butter seasonings, to taste (salt, pepper, cajun seasoning etc.) Break up the sausage into small pieces and cook til done. Drain. Set aside. Sauté onions and bell peppers. In a large bowl beat the eggs thoroughly and add the milk. Now add the sausage, bell peppers and onions, the mayonnaise and the cheese. Season to taste. Mix the Bisquick in a small bowl with enough water to make it rather soupy. Add the Bisquick and the butter to the eggs reserving a small amount of the mixed Bisquick. Mix the entire ingredients. Pour into a greased 8x10-inch casserole pan. Now take the remaining Bisquick and pour on the top of the mixture. Bake at 350°F for approximately 45 minutes. Remove and let cool for about 5 minutes. Cut into 4-inch cubes and serve with your favorite salsa. Enjoy! Submitted by: Bill Ousley |
