POTATO BREAKFAST CASSEROLE 
1 lb. shredded potatoes (can use "Simply Potatoes" found in dairy counter)
1 lb. bacon, diced & fried
1 lg. onion, diced & fried in bacon drippings; drain
3 c. sharp cheddar cheese
8 slightly beaten eggs
1/2 tsp. black pepper

Butter a 9"x13" pan. Mix pepper, eggs, potatoes and cheese. Mix in bacon and onion. Spread into pan and bake in 350 degree oven 40 to 45 minutes or until set. Can be made day ahead and put into oven in the morning, unless using fresh shredded potatoes.

My wife and I tried this recipe with a few variations we sliced half of the potatoes and shredded half and added some shredded onions to the mix. Layered the eggs with sausage on top of that with a layer of cream of mushroom soup spread like cake frosting on top of that, followed by a Mexican blend of shredded cheese. It was delicious. Next time we're gonna try adding sliced mushrooms to the potato mix !

Added sliced deli ham in addition (one inch squares). Doubled and cooked for 1 hour 15 minutes (so it didn't jiggle in the middle). GREAT for football Sunday's.

I put the bacon on top instead of mixed in. Also added peppers w the onions. I would def put the bacon on top.
