BREAKFAST CASSEROLE 
2 c. chopped ham, bacon or sausage
1 c. shredded cheddar cheese
5 eggs
1 c. Bisquick mix
2 c. milk

Place meat and cheese in bottom of 13x9-inch greased pan. Mix remaining ingredients and pour on top of meat and cheese. Bake at 400°F for 45-50 minutes.

I made this for a work potluck at the last minute. I remembered the morning of the breakfast and had 15 minutes to prep and get it into the oven. It worked, I arrived with the hot casserole and got rave reviews from my co-workers! The first time I made this with Cottage Bacon (sort of like Canadian bacon) and pepper jack cheese. I just made this again and this time used ham, cheddar, mushrooms and some diced green chilies - still great. I love this recipe because its fast, delicious, and ingredient flexible!

Really good! I used sliced beer bratwurst because that's all I had in the house. With a pinch of salt and a shake of pepper, an extra egg and a smidge more of the milk and Bisquick (to make more) it turned out beautifully. I will use this again!

So far so good. I fried up some bacon, drained it, then added two small onions and one bell pepper. Added the bacon back to the veggies, and poured in a cup of salsa. Cooked another three minutes. Put the mixture in the baking dish and topped with cheese. Then poured over the baking mix. Its in the oven and looks and smells great. Can't go wrong.

Made this same basic recipe with imitation crab, shrimp and Old Bay seasoning for a breakfast where I was substitute teaching in Maryland. They really love crabs there and my breakfast bake was a big hit!
