TEXAS - RICE - AND - BEAN -
SKILLET
 
1 lg. onion, chopped
1 lb. ground beef
3 c. water
1 c. rice
1 tsp. salt
1 (1 1/4 oz.) pkg. chili seasoning mix
1 (8 oz.) can tomato sauce
1 (15 oz.) can kidney beans, drained
1 lg. green pepper, chopped

Cook onion and ground beef in Dutch oven or 12 inch skillet until meat is lightly browned. Drain excess fat. Add water, rice, salt, seasoning mix, tomatoes and beans. Bring to a boil. Reduce heat. Cover tightly and simmer 20 minutes, stirring occasionally. Remove from heat. Stir in green pepper. Cover and let stand 5 minutes or until most of liquid is absorbed. Serves 6.
