“MICHELE'S FAMOUS TACO SALAD” IS IN:

MICHELE'S FAMOUS TACO SALAD 
1 lb. ground beef
1 env. taco seasoning mix
1 head of lettuce, cut in long lengthwise strips
3-4 sliced scallions
3-4 diced fresh tomatoes
1 cup shredded cheddar cheese
1 cup corn chips
Catalina salad dressing (fat fee)
tortilla bowls (optional)

Brown ground beef in a skillet, drain fat, add taco seasoning mix and prepare as directed on package. Set aside.

In a large salad bowl combine: cut lettuce, sliced scallions, diced tomatoes, shredded cheese, seasoned ground beef, corn chips, and salad dressing.

Toss gently and serve immediately in tortilla bowls.

I fry my own tortillas to make bowls, but to lessen the carbs I use low carb, whole wheat Mission brand tortillas. My entire family raves about these!

Sounds good but I would add refried beans to coat the bottom of the bowl as well as black olives as many have suggested in comments sections. Thanks for the recipe.

Try using the Tangy Bacon Catalina dressing and Doritos. It's not as healthy but it really kicks it up a notch. My family loves it.

This recipe has been a family favorite for 30 years, and I was glad to see it in print. Our military wives club made it for a church fundraiser back in 1982, while stationed in Boblingen, Germany. We sold bowl after bowl outside the PX to our wonderful troops. They loved it and came back for 2nds & even 3rds. We sold it for $1.00 a bowl. In those days, there were no "regulations" on making food in your own kitchens to sell. Life was beautiful. The Catalina Dressing is one of the essentials; but, we always use the "regular" instead of the "lite" dressing. Also diced sweet onions (Walla Walla if available), and salted Tortilla chips instead of corn chips. Serve in paper-bowls and it's less mess and less carbs.

My family loves this salad. I also add a bit of garlic salt, half a package of taco seasoning, a can of rinsed kidney beans, sliced black olives,and a diced avocado. Chopped rotisserie chicken works equally as well as the beef for a change. One can also use Romaine in place of the Iceberg lettuce or a combination of both... a full meal! T.
