BAGELS 
1 pkg. dry yeast
1 c. warm water
2 tbsp. sugar
1 tsp. salt
2 3/4 c. flour
2 qts. water

Dissolve yeast in warm water in large bowl. Stir in sugar, salt and 1 1/4 cups flour. Stir until smooth. Stir in remaining flour. Knead until smooth and elastic. Cover dough, let rise 15 minutes.

Divide dough in 8 equal parts, roll each part into 6 inch rope; moisten ends with water and seal ends together to form a bagel. Cover bagels let rise 20 minutes.

Heat 2 quarts water to boiling; reduce heat, add 4 bagels; simmer 7 minutes; turning once. Drain on towel. Repeat with remaining bagels. Bake on greased baking sheet 30 minutes at 375 degrees.
