CINNAMON RAISIN BAGELS 
2 pkg. dry yeast
1 1/2 c. water, very warm (not hot)
2 tbsp. sugar or honey
1 tsp. salt
4 c. flour, approximately
2 tbsp. cinnamon
1 1/2 c. raisins
1 gallon water
1 tbsp. honey

Dissolve yeast in water, add sweetener and salt. Beat in 2 cups of flour and cinnamon. Knead in about 2 cups of the flour, until dough in smooth and moderately stiff. Knead in raisins. Divide dough into 12 parts. Roll each part into a ball and poke a finger through the center. Allow to rise 35 minutes.

Heat water and 1 tablespoon honey to simmer. Boil bagels (2-3 at a time) for 7 minutes, turning once. Drain on absorbent towels.

Bake on greased cookie sheet at 350 degrees for 30 minutes.

This recipe is amazing! It was my first time making bagels, and it worked great. I do make bread sometimes, and so I had an idea of what the dough consistency should be like. From my gatherings 1 cup of raisins was more than enough, and I used the honey method and was kind of generous. Sugar is sweeter than honey, so I thought a little extra wouldn't hurt. Not to mention some always sticks to the spoon. Also it definitely needs like 4 and a half cups of flour, or just under. 4 was a little mushy still. I cooked 3 at a time for 7 minutes boiling, so 28 minutes. I waited to bake until the last batch dried for about 15 minutes using paper towels and a drying rack. I had no idea how dry to get them so I just figured reasonably dry would work. They turned out amazing, and my bagel craze has begun. Thank you for this recipe!
