BROWN RICE PUDDING 
2 eggs
2 c. milk
1/3 c. honey
1 tsp. vanilla
1 1/2 c. brown rice, cooked
Generous sprinkle of nutmeg
1/2 c. raisins

Beat eggs, add milk, honey, vanilla, rice and raisins. Butter a casserole dish with butter, pour in dish and sprinkle top with nutmeg. Bake at 350 degrees for 1 to 1 1/2 hours. Check after 1 hour.

Quick, easy and absolutely delicious! Whipped this up in a jiffy but omitted the raisins as they are not my favorite. Was out of nutmeg but used Pumpkin Pie spice instead. Perfect! Will make again and would definitely recommend. DO check your oven after an hour as mine was a deep dark golden brown and completely set after 50 minutes. Great recipe. Thanks!
