CREAMY RICE PUDDING 
1/2 c. rice
2 c. evaporated milk
2 c. hot water
1/2 c. sugar
1/4 tsp. nutmeg
1/2 tsp. salt

Wash and pick over rice.

Combine, rice, milk, water, sugar, nutmeg and salt in the top of double boiler. Cook covered over boiling water for 2 hours or until liquid is absorbed.

Chill. Serve plain or with cinnamon and sugar, shaved maple sugar, whipped cream or any suitable sauce you like.

Makes 6 servings.
