STOVE TOP CREAMY RICE PUDDING 
2 qts. milk
1 c. rice
1 c. sugar
4 eggs
2 c. evaporated milk
Dash of salt
1 tsp. vanilla

Mix 2 quarts milk and rice. Cook for 25 minutes over medium heat. Add 1 cup evaporated milk and remove from stove. Stir in eggs, sugar, remaining cup of evaporated milk, salt and vanilla.

Return to stove, continue stirring until creamy and thick. Pour into bowl and top with cinnamon and sugar. TIP: Use a large pot; this mixture boils up.
