CREAMY RICE PUDDING 
1 qt. half & half
1/2 c. regular long grain rice
1/2 c. sugar
1/4 tsp. salt
1/4 tsp. vanilla
1/2 c. raisins (optional)
Ground cinnamon or nutmeg

In a double boiler, stir the first 4 ingredients. Cover and cook over simmering water for approximately 2 hours. Stir frequently to separate the rice grains and until rice is tender and creamy. Stir in the vanilla. Remove from heat and stir in raisins. Dust with cinnamon (or nutmeg) and pour into a large bowl or serving dish. Cover and chill or eat when pudding has cooled. Wonderful on cold, rainy days.
