CREAMY RICE PUDDING 
4 c. milk
1 egg, well beaten
1 pkg. vanilla pudding & pie filling (not instant)
1 c. minute rice
1/3 c. brown sugar
1 tsp. vanilla
1/4 c. raisins, optional
1/4 tsp. cinnamon
1/8 tsp. nutmeg

Mix 3 1/2 cups milk and beaten egg together in saucepan. Mix pudding mix, brown sugar and 1/2 cup milk. Add to the milk mixture. Add rice and raisins. Stir over medium heat until mixture comes to a boil. Remove from heat; add vanilla. Pour into serving bowl. Sprinkle with cinnamon and nutmeg. Serve warm or cold. Serves 10.
