GOURMET RICE PUDDING | |
1/2 c. uncooked enriched long grain white rice (not instant) 3 c. boiling water 1/2 tsp. salt 14 oz. can sweetened condensed milk 1/2 c. raisins, if desired 1/4 c. butter 1 tbsp. vanilla In top of double boiler, combine rice, water and salt. Cook over medium heat about 40 minutes or until rice is tender. DO NOT DRAIN. Stir in condensed milk, raisins and butter. Cook, stirring frequently, until slightly thickened, about 20 minutes. Remove from heat; add raisins and vanilla. Serve warm or cold. Serves 6 to 8. Rice should be cooked covered until tender. |
