CARROT APPLE SQUARES 
2 c. flour
2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. chopped walnuts or pecans
1 1/2 c. sugar
1/2 c. unsalted butter
1 tsp. vanilla
2 eggs
2 c. chopped, baking apples
2 c. shredded carrots
Vanilla ice cream

Preheat oven to 350 degrees. Grease 13x9x2 inch baking dish.

Combine flour, soda, cinnamon, salt and nuts in bowl. Combine sugar, butter and vanilla in large bowl until smooth and fluffy. Add eggs, beat until fluffy. Stir in apples and carrots by hand. Add dry ingredients. Stir just to blend; mixture will be stiff.

Scrape into prepared pan. Spread level. Bake for 15 minutes at 350 degrees and reduce temperature to 325 degrees and bake 25 minutes more or until toothpick inserted in center comes out clean. Cool in pan on rack at least 30 minutes. Cut into squares. Top with ice cream.
