CARROT APPLE HEALTH CAKE 
1 1/2 to 1 1/4 c. Wesson oil
2 c. sugar
1/2 c. light brown sugar
4 egg yolks
5 tbsp. hot water
1 c. whole wheat flour
2 c. sifted flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. nutmeg
1 1/2 tsp. cinnamon
1 tsp. allspice
1 tsp. ground cloves
2 c. grated raw carrots
1 c. grated apples
1 c. chopped pecans
1/2 c. apple cider or 1 sm. can crushed pineapple

Heat oven to 350 degrees. Grease and flour Bundt pan. With electric mixer, cream oil and sugar. Beat in yolks, one at a time. Add hot water. Sift dry ingredients and spices. Add to first mixture. Add carrots, apples, nuts and cider. Beat well. Fold in beaten egg whites. Bake 60 to 70 minutes. Glaze with powdered sugar combined with orange juice.
