RAISIN, CARROT, AND APPLE CAKE 
1/4 c. butter, softened
1 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla
1 c. flour
1 tsp. baking soda
1 c. grated apple
1 c. raisins
1 c. raw, grated carrot

Beat butter, sugar, spices, and vanilla. Add dry ingredients, mixing to blend (mixture will be dry). Stir in apples, carrots, and raisins. Turn batter into a buttered 8 inch pan. Bake at 350 degrees for 40 to 50 minutes; cool. Frost with cream cheese frosting or your favorite frosting.

Do not be freaked out by how dry this batter is. The first time I made it, I was sure the recipe had left something out. The resulting cake is super moist, healthful and delicious. I did not frost it, but just cut it into bars. The next time I make it, I will reduce the sugar down to 3/4.

This was super quick to make - used food processor to grate carrots, then apples and raisins into bowl. Then all other ingredients into food processor, mixed and added to bowl. Changed sugar to 3/4 cup and added 1 cup chopped nuts to batter. When cooled frosted with 1 (8 oz.) package cream cheese, 1/2 cup powdered sugar, 1 teaspoon vanilla. Easy cleanup & absolutely AWESOME! Super moist & flavorful - definitely a keeper!!!
