CHICKEN BREASTS IN PHYLLO 
1 1/2 c. mayonnaise
1/3 c. lemon juice
2 tsp. dry tarragon
24 sheets phyllo
1 1/3 c. butter, melted
1/3 c. grated Parmesan cheese
1 c. chopped green onion
2 cloves garlic, minced
12 chicken breast halves, skinned and boned
Salt and pepper to taste

Combine mayonnaise, onion, lemon juice, garlic, and tarragon to make a sauce. Place 1 sheet phyllo on working surface. Brush with approximately 2 teaspoons butter. Spread 1 1/2 tablespoons sauce on each side of chicken breast. Spread melted butter on 2nd phyllo sheet (place on top of first sheet). Place chicken in one corner of buttered phyllo sheets. Fold corner over breast, then fold sides over and roll breast up in the 2 sheets to form a package. Place in ungreased baking dish. Repeat with remaining breasts and phyllo sheets. Brush packets with rest of butter and sprinkle with Parmesan cheese. Bake for 20 to 25 minutes at 375 degrees. Should turn golden brown.

I was first introduced to this recipe in high school "Foods Class" back in '92. I was 14 and went home and made it for my mom! I'm 32 now and still enjoying it. Sometimes I'll use miracle whip instead of mayo. You can also sub basil for tarragon.
