CINNAMON ROLLS 
2 c. scalded milk
1/2 c. shortening or butter
1 c. mashed potatoes
2 tbsp. yeast
1/2 c. warm water
2 eggs, beaten
1 c. sugar
1/2 c. chopped walnuts (optional)
1 c. raisins
6 1/2 to 7 c. flour
2 tsp. salt

Pour milk over shortening and cool to lukewarm. Soften yeast in 1/2 cup warm water. Add to milk mixture, add eggs, sugar, salt and potatoes, 4 cups flour. Mix with mixer until smooth. Add nuts and raisins and enough flour to make soft dough. Cover and let raise until double. Divide dough in half. Roll to rectangle.

Spread with butter, cinnamon and brown sugar. Roll and cut in slices. Place on cookie sheet. Let raise until double. Bake at 350 to 400 degrees for 20 minutes or until light brown. Frost while warm.
