BEAN SOUP WITH HAM FOR 32 PEOPLE | |
3 lb. navy or great northern beans 2 gallons water 2 lb. baked ham, cut in cubes 1 lb. 8 oz. finely chopped onion 1 lb. chopped celery 2 oz. salt and pepper mix 6 oz. chopped pimento 2 tbsp. parsley flakes Cover beans with cold water. Soak overnight in cool area. Next morning drain. Add beans to 2 gallons of water and bring to boil. Add ham, onion, celery, and salt and pepper mix, simmer at least 1 1/2 hours until beans are tender. Remove 1/2 of bulk and slightly mash and return to pot. Add pimentos and parsley flakes and bring to boil. Simmer approximately 20 minutes stirring to prevent sticking. Makes approximately 32 9-ounce portions. |
