CINNAMON ROLLS 
1 pkg. yeast
1/2 c. lukewarm water
2/3 c. shortening
1/2 c. sugar
1 tsp. salt
1 c. mashed potatoes, instant
1 c. milk, scalded
2 eggs, beaten
5 1/2 - 6 c. flour

Dissolve yeast in water. Mix shortening and sugar, salt, potato. Add scalded milk. Cool to room temperature. Add yeast and eggs. Gradually add flour, mixing well. Let rise 1 1/2 hours.

Roll to 1" thick, spread butter, cinnamon and brown sugar, add raisins over all or you may add raisins over half the dough.

Roll up and slice 1 1/2" thick. Put in greased pan (cookie sheet). Let raise 45 minutes.

Bake at 350 to 375 degrees for 15 to 20 minutes.

FROSTING:

1 c. powdered sugar
2 tbsp. milk
1 tsp. vanilla or orange extract
