CINNAMON ROLLS 
2 eggs, lightly beaten
1 1/2 tsp. salt
1 c. mashed potatoes
1/4 c. Crisco
1 pkg. yeast (not cake yeast)
1 1/4 c. warm milk
1/2 c. sugar

Combine yeast and warm milk with 1/4 cup sugar. Set aside until yeast bubbles. Add rest of ingredients. Add enough flour to make a soft dough. Knead 8-10 minutes. Let rise 1-2 hours, to at least 1/2 in size. Grease with Wesson oil before rising.

Punch down and roll out like jelly roll (rectangle size). Spread with butter, cinnamon and brown sugar. Roll up and cut into 1 inch slices. Grease a 9 x 13 inch pan and put slices in pan with sides touching. Cover with paper towels - let rise double in size (3-4 hours). Bake at 350 degrees for 15-20 minutes.
