FAMOUS CINNAMON ROLLS 
1 1/2 c. warm water
1/3 c. sugar
1 pkg. dry yeast
1 c. mashed potatoes
1/3 c. sugar
2/3 c. oil
2 eggs
1 1/2 tsp. salt
6 1/2 c. flour
Butter, brown sugar, cinnamon

Mix 1/3 cup sugar, warm water and yeast and let stand. Mix other 1/3 cup sugar, oil, eggs and salt and add mashed potatoes. Stir well, add to yeast mixture, add flour and turn out onto floured board. Knead well. (Can be put into refrigerator until needed or allowed to rise until doubled). Divide and roll out to an oblong. Spread with butter. Sprinkle with brown sugar and cinnamon. Roll up and cut into 1 1/2 inch pieces. Butter pan and sprinkle with brown sugar. Put in the rolls and let rise. Bake at 375 degrees for 15 to 20 minutes.

Makes 36 rolls (or 42 dinner rolls).
