BAKING FORMULA RICH CRISP COOKIES | |
Be sure to chill the dough for "rolled out" cookies. This make it firm and easy to handle without excess flour on your board. BAKING FORMULA FOR RICH CRISP COOKIES: 1 cup shortening 2 eggs, well-beaten 2 cups sifted all-purpose flour 1/2 level tsp. baking powder 1/2 tsp. salt 1 cup sugar 1 tsp. flavoring (vanilla, almond or lemon) Cream shortening well; add eggs, well-beaten, then sifted dry ingredients. Add flavoring last. Use 1 teaspoon vanilla; or 1/2 teaspoon lemon and 1/2 teaspoon almond flavoring; or 1 teaspoon grated orange rind, as desired. Chill. Roll very thin. Bake on ungreased cookie sheets in quick (400°F) oven for 8 to 10 minutes. Makes about 4 dozen cookies. CINNAMON SAND TARTS: Use baking formula for Rich Crisp Cookies. Use almond flavoring. Chill dough and roll thin. Beat white of egg slightly and add 1 tablespoon water. Mix 1/2 cup sugar, 2 teaspoons cinnamon with 3 tablespoons chopped almonds. Brush cookies with egg white. Sprinkle with sugar mixture. Bake at 400°F for 8 to 10 minutes. LEMON THINS: Use baking formula for Rich Crisp Cookies. Flavor with 1/2 teaspoon grated lemon rind and 1 teaspoon lemon juice. Chill dough. Roll very thin. Cut cookies and bake as directed in baking formula. Put together in pairs with a Lemon Butter Frosting between. Note: Orange juice and rind may be substituted for lemon. |
