TWICE BAKED NUT COOKIES | |
4 cups flour 4 eggs 1 tsp baking powder 1 cup oil 1 cup chopped nuts 1/2 tsp. salt 1 tsp. vanilla 1 cup sugar Beat together eggs, oil, sugar and vanilla. Sift flour with salt and baking powder. Add to other ingredients and mix well. Stir in nuts, mixing well. Refrigerate for several hours or overnight. Shape into rolls and place on greased cookie sheet. Bake at 350°F for about 35 minutes or until golden. Slice into 1/2 inch thick slices while still warm. Place each slice on its side and sprinkle with a mixture of cinnamon and sugar. Return to oven and bake for about 10-15 more minutes to dry. |
