BAKING FORMULA RICH WAFFLES | |
Morning, noon or night there's never a time when waffles are not welcome. When you make yours with the baking formula, delicate and tender, everyone will ask for your recipe. BAKING FORMULA FOR RICH WAFFLES: 2 cups sifted cake flour 2 level tsp. baking powder 1 tsp. salt 1 tbsp. sugar 3 eggs, separated 1 1/4 cups milk 4 tbsp. melted shortening Mix and sift together dry ingredients (sifted cake flour, baking powder, salt and sugar). Separate eggs. Beat egg yolks until thick and lemon colored, add milk, stir together well and add to sifted dry ingredients. Stir in melted shortening. Fold in egg whites, stiffly beaten. Bake on hot waffle iron according to directions given for your own particular waffle iron. ORANGE CREAM WAFFLES: Use baking formula for Rich Waffles. Stir in 1 tablespoon grated orange rind and 2 tablespoons orange juice. Bake according to directions given with your own waffle iron. Serve with Rich Orange Sauce. RICH ORANGE SAUCE: 1 cup sugar 1 tbsp. cornstarch 1/4 cup orange juice 3/4 cup boiling water 2 tbsp. butter grated rind of 1 orange Mix together sugar and cornstarch. Add orange juice and boiling water. Bring to boil and boil gently for 5 minutes. Remove from heat, add butter and grated orange rind. COCONUT DESSERT WAFFLES: Use baking formula for Rich Waffles and to the batter add 1 cup shredded coconut before folding in the stiffly beaten egg whites. Serve these for dessert with a sprinkling of confectioners' sugar over the top and slices oranges on the side. COCOA CREAM WAFFLES: Use baking formula for Rich Waffles. Omit sugar and add 4 tablespoons cocoa to the sifted dry ingredients before mixing batter. HAM WAFFLES: Use baking formula for Rich Waffles and add 3 to 4 tablespoons boiled ham, ground fine or chopped. |
