NO BAKE, NO-NUTS RUM BALLS | |
One (16 to 17 oz.) package sandwich cookies (any flavor of frosting) 1/4 cup unsweetened cocoa 3/4 to 1 cup powdered sugar 2 tbsp. corn syrup 3 oz. rum (or other alcohol - bourbon, peppermint schnapps, etc) For coating the balls: additional powdered sugar -OR- Hot chocolate drink powder -OR- cinnamon Crush sandwich cookies into crumbs in food processor. Add 3/4 cup of the powdered sugar, the cocoa, corn syrup, and rum. Mix until a soft dough forms that does not stick to the fingers; this may depend on the amount of frosting in your sandwich cookies and size of the package. Add additional powdered sugar (usually up to 1/4 cup) until the dough is of a consistency to roll into balls without sticking to your hands. Pinch off dough and roll into 1-inch balls. Coat with additional powdered sugar, hot chocolate drink powder, or cinnamon. Makes 3 to 3 1/2 dozen balls. Submitted by: Teresa Merrick |
