NO BAKE, NO-NUTS RUM BALLS
One (16 to 17 oz.) package sandwich cookies (any flavor of frosting)
1/4 cup unsweetened cocoa
3/4 to 1 cup powdered sugar
2 tbsp. corn syrup
3 oz. rum (or other alcohol - bourbon, peppermint schnapps, etc)

For coating the balls:

additional powdered sugar -OR-
Hot chocolate drink powder -OR-
cinnamon

Crush sandwich cookies into crumbs in food processor. Add 3/4 cup of the powdered sugar, the cocoa, corn syrup, and rum.

Mix until a soft dough forms that does not stick to the fingers; this may depend on the amount of frosting in your sandwich cookies and size of the package. Add additional powdered sugar (usually up to 1/4 cup) until the dough is of a consistency to roll into balls without sticking to your hands.

Pinch off dough and roll into 1-inch balls. Coat with additional powdered sugar, hot chocolate drink powder, or cinnamon.

Makes 3 to 3 1/2 dozen balls.

I made some with rum, peppermint schnapps and alcohol free for Christmas cookie exchange at work. What a hit they were. I used black and white sandwich cookies and for covering of the rum balls I rolled them in chocolate jimmies. The peppermint schnapps I rolled in crystal peppermint sugar which was red and white in color. The non-alcohol balls I dipped in melted chocolate and sprinkled the tops with holly berry and leaf candy. I plan making more for friends and family. Love them and so easy to do.

I normally did the nut version however due to a computer crash I had lost my recipe. While searching for a new one I found this one and I decided to try it. Now I used vanilla sandwich cookies and caramel vodka; because of this I didn't want to use cocoa in the mix. I used instead french vanilla pudding mix in place of the cocoa. They came out great. I have them in a coffee canister fermenting for Christmas :) I can't wait to try other variations with different alcohol.
