BAKING FORMULA ICE BOX COOKIES | |
BAKING FORMULA FOR ICE BOX (REFRIGERATOR) COOKIES: 1 cup shortening 1/2 cup white sugar 1/2 cup brown sugar 1/2 cup nuts, chopped OR 1/2 cup raisins or dates, cut small OR 1/2 cup coconut flakes 1 egg, slightly beaten 2 cups sifted cake flour 1 tsp. flavoring 1/4 tsp. salt 1 level tsp. baking powder 1/2 tsp. baking soda Cream shortening well. Add sugar gradually, creaming as you add. Beat in egg. Add flavoring. Add nuts or fruits and then blend in sifted dry ingredients. Turn onto a sheet of waxed paper. Shape into a roll, cupping your hands around the outside of the waxed paper covering and so shaping the dough into a tubular roll. Wrap well in waxed paper. Chill. Cut cookies from end of roll as needed and bake. Bake on ungreased cookie sheet, in moderately hot (375°F) oven, for 8 to 10 minutes. Cool on wire rack. ICE BOX SPICE COOKIES: Use baking formula for Ice Box (Refrigerator) Cookies and add to dry ingredients before sifting, 1 teaspoon cinnamon, 1/4 teaspoon cloves, 1/4 teaspoon allspice. Shape, wrap, chill and bake as directed in baking formula. COCONUT ICE BOX COOKIES: Use baking formula for Ice Box (Refrigerator) Cookies. Add 3/4 cup grated coconut to the dough. Wrap dough, chill, slice and bake as directed in baking formula. BROWN AND WHITE ICE BOX COOKIES: Use baking formula for Ice Box (Refrigerator) Cookies. Flavor with vanilla flavoring. Divide dough into parts. To one portion add 1 (1 oz.) square of unsweetened chocolate, melted and cooled before adding. Chill each portion of dough until stiff and easy to handle. Roll each into an oblong piece about 1/8-inch in thickness. Place on on top of other, then roll together (like jelly roll). Wrap in waxed paper, chill, slice and bake as directed in baking formula given above. |
